Zucchini El Greco Pita Pizzas

Ingredients

  • 4 souvlaki-style pitas
  • 1 recipe prepared El Greco Sauce, or sauce of your choice
  • 14 cup kalamata olives, optional
  • 1 small zucchini, thinly sliced
  • 23 cup low-fat shredded mozzarella
  • Sea Salt, to taste
  • Black Pepper, to taste

Preparation

  • Preheat oven to 350° F (175° C).
  • Arrange pitas on a Sheet Pan. Spread prepared sauce on each pita. Layer with zucchini slices and olives. Sprinkle evenly with mozzarella.
  • Bake for 10–15 minutes, until edges start to crisp. Season to taste.
