Yam Enchiladas

Cheesy tomato flavour coupled with antioxidant-rich yams makes this dish delish—and in less than 20 minutes!

Ingredients

  • 2 12 cups diced yams
  • 1 tbsp Guacamole Dip Mix
  • 6 corn tortillas
  • 1 can (19 oz /540 ml) diced tomatoes
  • 2 tbsp Nacho Cheese Dip Mix
  • 1 cup grated cheddar cheese

Preparation

  • Combine yams and Dip Mix in a Multipurpose or Square Steamer. Cover and microwave on high for 3–4 minutes. Mash lightly with the back of a fork.
  • Fill tortillas with yam mixture. Roll and place seam-side down in a Multipurpose or Square Steamer.
  • Stir Nacho Cheese Dip Seasoning into the diced tomatoes, and pour over rolled tortillas.
  • Sprinkle with cheese, cover with lid, and microwave on high for 5 minutes.
