White Bean Soup (Fassolatha)

Ingredients

  • 2 tbsp olive oil
  • 1 cup medium-diced celery
  • 1 cup medium-diced carrots
  • 2 cans (14 oz /398 ml) white beans, drained and rinsed
  • 1 can (28 oz /796 ml) diced plum tomatoes
  • 4 cups Nourish Broth or Vegetable Broth, prepared
  • 1 12 tsp Nourish Broth Mix
  • 1 cup boiling water
  • 1 12 tsp Vegetable Broth Mix
  • 1 cup boiling water
  • Sea Salt, to taste
  • Black Pepper, to taste

Preparation

  • In a large pot, heat olive oil over medium heat. Add celery and carrots, and sauté for 2–3 minutes to soften.
  • Add broth and stir in beans and tomatoes.
  • Simmer gently, to develop flavours, for about 10 minutes. Season to taste.
