Whipped Shortbread
Ingredients
- 1 lb (450 g) cold butter
- 1 cup icing sugar
- 2 tsp vanilla extract
- 3 cups all-purpose flour
- 1⁄2 cup cornstarch
- 1 tbsp eggnog spice
- Royal Icing, optional
- 2 1⁄2 cups icing sugar, sifted
- 2 large egg whites
Preparation
- Cream together butter and icing sugar. Add vanilla extract.
- Add flour, cornstarch and spice, and beat dough until smooth. Chill for 30 minutes.
- Preheat oven to 350° F (175° C).
- On a lightly floured surface, roll dough out to 1⁄2” thickness. Cut into desired shapes and place on a Sheet Pan lined with a Sheet Pan Liner.
- Bake for 10–12 minutes. Do not brown.
- Store in an airtight container at room temperature.
