Warm Veggie Power Bowl

Ingredients

  • 3 medium potatoes or 600 g baby potatoes, chopped, skin on
  • 1 cup frozen edamame
  • 4 cups baby spinach
  • 2-14 oz cans chickpeas, drained and rinsed
  • 2 cups shredded carrots
  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp Balsamic Vinaigrette Dressing Mix
  • 2 tbsp water
  • 2 tbsp tahini
  • 1 tsp Dijon mustard

Preparation

  • In a Round or Multipurpose Steamer, add potatoes and microwave on high for 4–5 min until tender.
  • Add edamame and spinach. Cover and microwave on high for 2–3 min.
  • While veggies are steaming, combine dressing ingredients in a small bowl.
  • Divide veggie mixture into 4 bowls. Add chickpeas and shredded carrot; drizzle with dressing and serve.
