Ultimate Asian Noodle Bowl

A restaurant favourite that's easy to make at home. Long noodles symbolize long life - a great good-luck dish for Lunar New Year.

Ingredients

  • 1 pkg (6 oz/170 g) udon noodles, or whole-wheat spaghetti
  • 12 cup Ultimate Asian Sauce, divided
  • 3 tbsp Red Pepper Jelly
  • 2 tbsp low-sodium soy sauce, or gluten free soy sauce
  • 2 tbsp vegetable oil
  • 2 tbsp rice vinegar
  • 1 tbsp Asian Stir-Fry Seasoning
  • 1 tbsp sugar
  • 1 tbsp sesame oil
  • 1 tsp crushed chilies
  • 8 cups Nourish Broth, prepared
  • 1 12 tsp Nourish Broth Mix
  • 1 cup boiling water
  • 2 carrots, cut into coins
  • 1 celery stalk, thinly sliced
  • 1 bell pepper, thinly sliced
  • 2 cups mushrooms, sliced
  • 2 cups shredded cooked chicken, pork or beef
  • 2 - 3 green onions, sliced — optional

Preparation

  • In Multipurpose Pot, boil noodles until tender. Drain and toss with 1⁄4 cup Ultimate Asian Sauce. Set aside.
  • Pour Nourish Broth and remaining Ultimate Asian Sauce into Multipurpose Pot and bring to a boil. Add carrots, celery, pepper and mushrooms. Simmer for 15 minutes, until carrots are tender.
  • Stir in chicken and green onions. Divide noodles between bowls, then ladle hot soup overtop.
