Tomato Basil Zuppa

Quick and easy to prepare, this soup is great for lunch.

Ingredients

  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 tbsp Pesto Sauce Mix
  • 1 can (28 oz/796 ml) diced tomatoes, including juice
  • 1 tsp brown sugar
  • 3 cups Nourish Broth or Vegetable Broth, prepared
  • 1 12 tsp Nourish Broth Mix
  • 1 cup boiling water
  • 1 12 tsp Vegetable Broth Mix
  • 1 cup boiling water
  • Sea Salt, to taste
  • Black Pepper, to taste

Preparation

  • Heat olive oil in Multipurpose Pot over medium-high heat. Sauté onions with Pesto Sauce Mix until softened.
  • Add diced tomatoes, brown sugar and Bouillon. Bring to a boil, reduce heat and simmer for 10 minutes.
  • Season with Sea Salt and Black Pepper.
