Sylvie's Lunchbox Spinach Squares

These healthy, savoury squares make a great addition to any lunch.

Ingredients

  • 1 cup rolled oats
  • 1 cup grated cheddar cheese
  • 1 tbsp Fajita Seasoning, or Souvlaki Seasoning
  • 2 eggs
  • 2 cups chopped cooked spinach
  • 1 container (8 oz/250 g) ricotta cheese or cottage cheese (about 1 cup)
  • 1 cup grated cheddar cheese, divided
  • 2 tbsp Lemon Dilly Dip Mix or Nacho Cheese Dip Mix
  • 1 tbsp 3 Onion Dip Mix
  • Black Pepper, to taste

Preparation

  • Preheat oven to 350° F (175° C).
  • For base, mix oats with cheese and Fajita Seasoning. Scatter over bottom of an 8” baking pan. (Tip: line with parchment paper.)
  • For filling, beat eggs in a bowl. Mix in spinach, ricotta, 1⁄2 cup cheddar, Lemon Dilly Dip Mix, 3 Onion Dip Mix and Pepper.
  • Spoon egg and cheese mixture over base, and sprinkle with remaining cheddar. Bake for 35–40 minutes, until set. Let cool, then cut into squares.
