Sweet & Sour Meatballs

Whip up a quick and mess-free dinner—meatballs in the microwave! It’s lightning quick and saves you having to preheat your oven. This is a family-friendly meal that’s packed with peppers and pineapple for that perfect balance of sweetness. Best served over a bed of rice to soak up the sauce.

Ingredients

  • 1 lb (450 g) lean ground beef or chicken
  • 1 pkg Sticky Orange Chicken Seasoning or Sweet & Sour Stir-Fry Seasoning, divided
  • 2 bell peppers
  • 1 can (14 oz/398 ml) pineapple chunks in juice
  • 1 tbsp each low-sodium soy sauce and oil

Preparation

  • In a large bowl, combine beef and 2 tbsp seasoning. Mix well. Form into 16 meatballs (about a scant 2 tbsp each).
  • Arrange in a single layer in Round Steamer or Multipurpose Steamer (it’s OK if they touch).
  • Chop peppers; add to steamer. Cover; microwave on high 6–8 min, or until cooked.
  • Meanwhile, prepare sauce: drain pineapple chunks but reserve the juice.
  • In Sauté Pan, combine remaining seasoning, reserved pineapple juice, soy sauce, and oil. Bring to a boil over medium-high heat, stirring constantly. Reduce heat; simmer until sauce has thickened to your liking.
  • When meatballs and peppers are cooked, carefully drain and discard liquid from bottom of Steamer. Add meatballs, peppers, and reserved pineapple chunks to pan; stir until meatballs are coated with sauce and pineapple is heated through, about 1–2 min.
