Not to be too corny but we’re loving this smoky, Tex-Mex twist on classic mac. It’s like a cheesy fiesta in every bite. This mac & cheese boasts 18 grams of protein—serve it alongside a veggie that has a couple of grams of protein for a complete meal, like broccoli or Brussels sprouts.

Ingredients

  • 2 cups macaroni or bite-size pasta, your choice
  • 1 pkg Mexican Street Corn Dip Hot Dip Mix
  • 1 cup corn kernels, fresh, canned, or frozen
  • 1 cup shredded cheddar cheese
  • 13 cup sour cream
  • 14 cup milk, your choice
  • 2 tbsp unsalted butter

Preparation

  • Cook pasta in a large pot according to package directions. Drain and return to pot.
  • Stir in dip mix, corn, cheese, sour cream, milk, and butter. Stir until cheese is melted and pasta is evenly coated.
  • Serve with toppings, if desired.
