Steamer 8-Minute Potato and Cauliflower Salad

Ingredients

  • 1 12 lbs (580 g) mixed coloured baby potatoes
  • small cauliflower broken into florets
  • 1 recipe prepared Creamy Ranch Dressing
  • 13 cup milk
  • 1 cup Creamy Ranch Dip, prepared
  • 3 tbsp Creamy Ranch Dip Mix
  • 1 cup light sour cream, or yogurt
  • 1 cup light mayonnaise
  • Sea Salt, to taste
  • Black Pepper, to taste
  • Better Than Bacon Topper, to taste

Preparation

  • Wash and cut potatoes in half, and place in a Multipurpose Steamer with lid.
  • Cook on high in microwave for 4–5 minutes, remove and top with cauliflower florets, replace lid, and cook for another 2–3 minutes. Transfer to salad bowl, and allow to cool.
  • Toss potatoes and cauliflower with Creamy Ranch Dressing, liberally sprinkle with topper, and serve.
