Squash, Farro and Turkey Sausage Soup
Try this cozy, stick-to-your-ribs dinner after an energetic afternoon outdoors.
Ingredients
- 2 tsp olive oil
- 2 mild or spicy Italian turkey sausages
- 6 cups Nourish Broth, prepared
- 1 1⁄2 tsp Nourish Broth Mix
- 1 cup boiling water
- 2 cups Marinara Sauce, prepared
- 1 can (28 oz/796 ml) diced tomatoes
- 1 can (28 oz/796 ml) crushed tomatoes
- 3 tbsp Marinara Sauce Mix
- 2 cups cubed squash, or 4 carrots, chopped
- 1 cup pearled farro
- 4 cups spinach or kale, chopped
- Sea Salt, to taste
- Black Pepper, to taste
Preparation
- Add oil to a large pot and set over medium-high heat. Add sausages and cook until browned. Remove to a cutting board. Slice into rounds.
- Pour Nourish Broth into pot. Scrape up and stir in any sausage bits left on the bottom. Stir in Marinara Sauce. Bring to a boil, then add squash and farro. Reduce heat, cover and simmer, stirring occasionally for 25–30 minutes, until farro is tender.
- Add spinach and cook for 2-3 minutes, until just wilted. Taste, then add Salt and Pepper. Spoon into bowls and drizzle with more olive oil, if desired.
