Ingredients

  • 4 cups cooked baby potatoes, halved
  • 6 cups coleslaw mix
  • 2 cups mixed cherry tomatoes, halved
  • 2 cups cucumber ribbons
  • 1 avocado, sliced
  • 1 lb (450 g) Southern Baked chicken, prepared, cubed
  • 2 lbs (900 g) boneless, skinless chicken breasts
  • 1 tbsp oil
  • 1 pkg Southern Baked Gluten Free Crumb Mix
  • 34 cup Epicure dressing of your choice, prepared
  • Smoky Roasted Tomato Nutritional Yeast Topper, to taste (optional)

Preparation

  • Arrange first six ingredients in four bowls
  • Drizzle with your choice of dressing
  • Shake on nutritional yeast sprinkle if using.
