Smokin’ Caesar Potato Salad

Ingredients

  • 1 lb (450 g) baby red potatoes, cut in half
  • 2 tsp Fajita seasoning
  • 12 cup celery or green onions
  • 1 recipe Caesar Dressing, prepared
  • 2 tbsp Caesar Dressing Mix
  • 2 tbsp light mayonnaise or Greek yogurt
  • 1 tbsp lemon juice
  • 14 cup olive oil
  • 14 cup milk, your choice
  • 2 crushed garlic cloves, optional
  • 2 eggs, cooked and sliced
  • Better Than Bacon Topper, to taste

Preparation

  • Place potato halves in a Multipurpose Steamer, sprinkle with seasoning, and microwave, covered, for 6–8 minutes, until potatoes are fork-tender.
  • Place potatoes and celery in a large bowl. Add dressing and eggs. Toss to mix evenly and top with Better Than Bacon Topper.
  • Serve warm or refrigerate until chilled. Salad will keep for up to three days in fridge.
