Skinny Zucchini Alfredo

Oodles of zoodles! We love using fresh zucchini to make a low-carb pasta dish. Best of all, the whole dish is prepared in the microwave – less mess and less stress!

Ingredients

  • 1 pkg Alfredo Sauce Mix
  • 1 12 cups milk
  • 4 small zucchinis, spiralized into thick noodles
  • 2 cups chopped broccoli
  • 1 cup frozen peas
  • Grated Parmesan cheese, to taste

Preparation

  • In a Multipurpose Steamer combine mix with milk. Microwave, uncovered, on high for 4–5 min, or until thickened, whisking halfway through.
  • Add zucchini noodles, broccoli and peas. Gently toss to mix.
  • Cover and microwave on high 1–2 min, or until veggies are tender. Top with cheese, as desired.
