Sheet Pan Coq au Vin

Say “au revoir” to complicated cooking and “bonjour” to an irresistibly easy, elevated weeknight dinner. We’ve taken this iconic, French dish, known for bold flavours and tedious prep, and turned it into a hassle-free sheet pan meal. And we’ve swapped traditional red wine for a lighter white, but feel free to use Nourish or Vegetable Broth instead.

Ingredients

  • 1 can (14 oz/398 ml) unsalted white beans, such as white kidney beans, drained and rinsed
  • 1 pkg (8 oz/227 g) sliced mushrooms, about 2 ½ cups
  • 2 tbsp olive oil
  • 2 lbs (900 g) boneless, skinless chicken thighs
  • 1 pkg Coq au Vin Seasoning 
  • 12 cup dry white wine

Preparation

  • Preheat oven to 425° F. Line Sheet Pan with Sheet Pan Liner.
  • In a large bowl, add beans, mushrooms, oil, chicken, and seasoning. Toss until well coated.
  • Arrange on pan. Drizzle with wine. Roast 30 min, or until chicken is cooked through.

Tips

Use your favourite type of white bean, or try something new! White kidney beans hold their shape better once cooked; butter beans (a.k.a. baby lima beans) are uber creamy; and Great Northern beans are mild but absorb lots of flavour.
