Salsa Veggie Skewers
Ingredients
- 2 zucchinis
- 2 bell peppers, cut into coarse chunks
- 1 red onion, cut into coarse chunks
- 2 tbsp vegetable oil
- Sea Salt, optional, to taste
- Black Pepper, optional, to taste
- 4 cups mixed greens
- 1⁄2 cup Poco Picante Salsa Dressing, prepared
- 1 recipe prepared Poco Picante Salsa
- 2 tbsp Poco Picante Salsa Mix
- 1 cup diced tomatoes
- 1 tsp lime juice, optional
- cilantro, optional
- 2 tbsp olive oil
- 1 tsp sugar
- Sea Salt , optional, to taste
- Black Pepper , optional, to taste
Preparation
- Using a Veggie Twist & Spiral Slicer, peel zucchini to form ribbons
- Alternately thread prepared vegetables onto 12" Metal Skewers.
- Using a basting brush, lightly brush vegetables with oil. Season to taste, if desired.
- Grill over medium-high heat with lid closed for 8 minutes, turning frequently.
- Serve on mixed greens topped with dressing.
