Ingredients

  • 12 cup dark chocolate chips
  • 12 cup sugar
  • 13 cup dark rum
  • 14 cup corn syrup
  • 2 12 cups finely chopped chocolate wafer crumbs
  • 2 tsp Cinnamon
  • 34 cup finely chopped nuts
  • cocoa or icing sugar, ground nuts, chocolate wafer crumbs or chocolate sprinkles, for decorating – optional

Preparation

  • Melt Chocolate in stainless-steel bowl over hot water.
  • Mix in sugar, rum and corn syrup. Stir in chocolate wafer crumbs, Cinnamon and nuts. Mix thoroughly. Scrape down sides of bowl, cover and refrigerate until mixture is firm.
  • Form into 1” balls, roll in your choice of cocoa, icing sugar, ground nuts, chocolate wafer crumbs or chocolate sprinkles.
  • Layer in an airtight container, placing a sheet of parchment paper between layers. Rum balls will keep for up to 1 month in freezer.
