Red Adobo Sauce with White Fish

Ingredients

  • 2 tbsp Adobo Seasoning
  • 13 cup vinegar
  • 2 tbsp olive oil
  • 1 tbsp tomato paste, or ketchup
  • 4 (4 oz/120 g) fresh or frozen white fish fillets
  • lemon pepper, to taste, optional

Preparation

  • Preheat oven to 375° F (190° C).
  • Combine Adobo Seasoning with vinegar, oil, and tomato paste. Place fish in roasting dish, and rub Red Adobo Sauce over entire surface of fish.
  • Season with lemon pepper if desired.
  • Roast for 15–20 minutes until fish is flaking and it easily comes apart.
