Ratatouille Black Bean Chili

Comforting veggie chilli can be made in minutes!

Ingredients

  • 1 small yam, coarsely chopped
  • 1 small zucchini, coarsely chopped
  • 1 - 2 tbsp Poco Picante Salsa Mix
  • 1 tsp 3 Onion Dip Mix
  • 1 can (14 oz/398 ml) diced tomatoes
  • 12 can (14 oz/398 ml) black beans, drained and rinsed

Preparation

  • In a bowl or directly in Rectangular Steamer, combine all ingredients.
  • Cover with lid and microwave on high for 8–10 minutes.
  • Eat all by its lonesome, or serve on rice or quinoa.
