Delve into the world of French cuisine with veggies as the star of the show! Don’t worry: the inspiration for this dish may have come from a movie, but our recipe is so easy, you won’t need to channel Remy in your chef’s hat to pull it off. Serve your ratatouille with pasta or rice; over a chicken breast or steak; topped with fried eggs; or added to loaded baked potatoes or stuffed peppers.

Ingredients

  • 1 eggplant
  • 1 red bell pepper
  • 1 zucchini
  • 2 tbsp olive oil
  • 1 pkg Ratatouille Seasoning
  • 1 can (14 oz/398 ml) diced tomatoes

Preparation

  • Dice eggplant, pepper, and zucchini.
  • Heat oil in Sauté Pan over medium heat. Stir in diced veggies, seasoning, and diced tomatoes.
  • Cover and simmer 12 min, or until vegetables are tender, stirring halfway.
