Quick Potato Lentil Soup

Ingredients

  • 2 tbsp vegetable oil
  • 2 tbsp Toasted Onion
  • 2 peeled, diced potatoes
  • 2 celery stalks, chopped
  • 2 cups red lentils
  • 1 tbsp Roasted Red Pepper Dip Mix
  • 1 tbsp CCB Dip Mix
  • 8 cups Vegetable Broth
  • 1 12 tsp Vegetable Broth Mix
  • 1 cup boiling water
  • Sea Salt, to taste
  • Black Pepper, to taste

Preparation

  • Combine first 8 ingredients in a Multipurpose Pot. Bring to a boil, reduce heat and simmer over medium-low heat for 20 minutes.
  • Season with Salt and Pepper.
