Potato Apple salad with Mango Curry dressing

Ingredients

  • 4 medium-size potatoes, rinsed and coarsely diced
  • 1 granny smith (or other crisp) apple, cored and diced
  • 2 stalks of celery, finely diced
  • 12 recipe prepared Mango Curry Dip
  • 3 tbsp Mango Curry Dip Mix
  • 1 cup plain yogurt or light sour cream
  • 1 cup light mayonnaise
  • juice from half a lemon, optional
  • sesame seeds, to taste
  • Sea Salt, to taste
  • Black Pepper, to taste

Preparation

  • Place potatoes in a Multipurpose Steamer with lid, and cook on high for 5–6 minutes, or until tender. Let cool.
  • Combine potatoes with the next three ingredients, sprinkle with sesame seeds and season to taste. Serve immediately, or chill until ready to serve.
