Pasta Primavera Frittata

Go meatless once per week. Only 10 minutes to prep and 25 to bake for an easy weeknight meal.

Ingredients

  • 1 cup bite-size pasta
  • 8 eggs
  • 14 cup milk
  • 1 tsp 3 Onion Dip Mix
  • 1 tsp Pesto Sauce Mix
  • 1 cup steamed broccoli
  • 1 tomato, diced
  • Sea Salt, to taste
  • Black Pepper, to taste
  • 13 cup grated Parmesan cheese

Preparation

  • In Multipurpose Pot, cook pasta according to package directions.
  • Preheat oven to broil.
  • In a large mixing bowl, whisk together eggs, milk, 3 Onion Dip Mix and Pesto Sauce Mix. Stir in pasta, broccoli and tomato. Season with Salt and Pepper. Set aside.
  • Lightly spray frying pan with vegetable oil and heat over medium heat. Pour egg mixture into pan, stirring with a spatula for 1 minute.
  • Reduce heat to medium-low and cook for 6–8 minutes. The sides and bottom should be firm, and the top slightly runny.
  • Sprinkle with Parmesan and place under the broiler for 3 minutes. Cut into wedges and serve.
