Ingredients
1 cup bite-size pasta
8 eggs
1⁄4 cup milk
1 tsp 3 Onion Dip Mix
1 tsp Pesto Sauce Mix
1 cup steamed broccoli
1 tomato, diced
Sea Salt, to taste
Black Pepper, to taste
1⁄3 cup grated Parmesan cheese
Preparation
In Multipurpose Pot, cook pasta according to package directions.
Preheat oven to broil.
In a large mixing bowl, whisk together eggs, milk, 3 Onion Dip Mix and Pesto Sauce Mix. Stir in pasta, broccoli and tomato. Season with Salt and Pepper. Set aside.
Lightly spray frying pan with vegetable oil and heat over medium heat. Pour egg mixture into pan, stirring with a spatula for 1 minute.
Reduce heat to medium-low and cook for 6–8 minutes. The sides and bottom should be firm, and the top slightly runny.
Sprinkle with Parmesan and place under the broiler for 3 minutes. Cut into wedges and serve.
