Orange-cranberry Chicken

This bright, elegant chicken dish is just right for winter dinners. Ready in just 20 minutes.

Ingredients

  • 1 orange
  • 2 tsp butter
  • 6 skinless, boneless chicken breasts
  • 12 cup Nourish Broth
  • 1 12 tsp Nourish Broth Mix
  • 1 cup boiling water
  • 34 cup cranberry sauce
  • 1 green onion, diced — optional

Preparation

  • Grate 1 tsp peel from orange and cut remaining peel from orange. Cut out fruit segments. Discard pits and pith.
  • Melt butter in frying pan over medium-high heat. Add chicken. Cook for 3–4 minutes per side, until golden. Remove to plate.
  • Pour Nourish Broth into pan. Add cranberry sauce and orange peel and stir until well-combined.
  • Return chicken to pan. Cover and cook, stirring and turning occasionally, for 6–10 minutes, until chicken is cooked through. Garnish with orange segments and green onion.
