Not Your Mom’s Macaroni Salad

Ingredients

  • 2 cups uncooked macaroni noodles
  • 4 cups hot water
  • 2 tbsp Pesto Sauce Mix
  • 12 cup mayonnaise
  • 2 - 3 tbsp lemon juice
  • 2 bell peppers
  • 2 celery stalks
  • 2 cans (170 g each) unsalted tuna
  • 1 cup frozen peas, defrosted
  • Black Pepper, to taste

Preparation

  • In Multipurpose Steamer, add noodles and water. Cover; microwave on high until tender, 7–8 min.
  • Meanwhile, in a large bowl, whisk together mix, mayonnaise, and lemon juice. Set aside.
  • Dice peppers and celery. Place in bowl with dressing.
  • When pasta is cooked, drain and rinse with cold water. Drain tuna. Add pasta, tuna, and peas to bowl; stir to mix. Taste and season with pepper and fresh lemon juice, if desired.
