Mozzarella and Tomato Antipasti

This is great as an appetizer, a salad, or can be served in a crusty roll as a delicious sandwich.

Ingredients

  • 3 tbsp olive oil
  • 2 tsp Pesto Sauce Mix
  • 4 large tomatoes
  • 34 lb (340 g) mozzarella cheese or bocconcini cheese
  • Sea Salt, to taste
  • Black Pepper, to taste

Preparation

  • Whisk together olive oil and sauce mix and allow to sit for at least 10 min.
  • Carefully slice tomatoes and mozzarella cheese into approximately 1⁄4" thick slices.
  • On a decorative platter, alternate overlapping slices of tomato with mozzarella cheese. Drizzle prepared olive oil mixture over top and season with salt and pepper. Serve immediately.
