Moroccan Couscous Salad
Ingredients
- 1 small onion, finely chopped
- 1 small lemon, divided – juice 1/2, mince 1/2
- 1 tsp Sea Salt, freshly ground
- 2 tbsp fresh lemon juice
- 1 cup raw couscous, cooked and cooled
- 1 tbsp Roasted Garlic Aioli Mix or Creamy Garlic Hummus Dip Mix
- 1 tsp Za'atar Seasoning or Shish Kebab Seasoning
- 1 medium carrot, finely chopped
- 1 cup chopped dried apricots, dates, and prunes
- 1 cup green olives, pitted and chopped
- 1⁄4 cup olive oil
- 2 tbsp chopped fresh parsley, optional
- Sea Salt, to taste
- Black Pepper, freshly ground, to taste
Preparation
- In a large bowl, marinate onion and lemon mince in lemon juice and Salt, approximately 5 minutes.
- Add remaining ingredients, and toss to combine.
- Season with Salt and Pepper, and serve at room temperature.
