Inspired by the uber popular elote—Mexico’s iconic street food—that’s taking social media by storm, this dip brings all those flavours into a cheesy, melty party favourite. It’s the perfect blend of creamy and smoky, guaranteed to steal the show at your next gathering. It has mild-medium heat so everyone can join in on the fun. Let’s get dippin’!

Ingredients

  • 1 pkg Mexican Street Corn Dip Hot Dip Mix
  • 1 brick (8 oz/250 g) cream cheese, softened
  • 1 12 cups corn kernels, fresh, frozen, or canned
  • 1 12 cups sour cream
  • 1 cup shredded cheddar cheese

Preparation

  • In Square Steamer or baking dish, combine hot dip mix with cream cheese, corn, sour cream, and cheddar cheese.
  • Microwave, uncovered, on high for 6–7 min, stirring hallway through, until dip is heated through. Alternatively, bake in preheated 375° F oven for 15–20 min. Add a squeeze of lime, if desired.
  • Serve with tortilla chips, crackers, baguette slices, or raw veggies.
