Mexican Fiesta Salad

A refreshing Mexican-inspired salad with avocados and fresh tomatoes.

Ingredients

  • 2 ripe avocados
  • 3 tomatoes, cut into wedges
  • 1 tbsp Guacamole Dip Mix
  • 2 tbsp olive oil
  • 2 limes, cut in half crosswise
  • Sea Salt, to taste
  • Black Pepper, to taste

Preparation

  • Score avocados in quarters lengthwise, and cut each in half lengthwise. Carefully remove pits, and peel off shells. Cut into wedges, and pile in the centre of a serving platter.
  • Arrange tomatoes around avocado wedges.
  • Sprinkle Guacamole Dip Mix overtop. Drizzle with oil and, using a 2-in-1 Citrus Press, juice limes overtop.
  • Season with Salt and Pepper. Serve immediately – before avocados begin to brown.
