Meatball Caesar
Try this cool twist on a classic Caesar salad! Epicure’s Caesar Dressing is low in fat and calories compared to other Caesar dressings at the store, so you can enjoy its creamy, garlicky goodness totally guilt-free. Lettuce is full of vitamins to promote healthy skin, eyes, bones, and digestion, and the meatballs are a complete source of protein.
Ingredients
- 1 head Romaine lettuce
- 1⁄4 cup Caesar Dressing, prepared
- 2 tbsp Caesar Dressing Mix
- 2 tbsp light mayonnaise or Greek yogurt
- 1 tbsp lemon juice
- 1⁄4 cup olive oil
- 1⁄4 cup milk, your choice
- 2 crushed garlic cloves, optional
- 12 Classic Meatballs
- 1 egg, beaten
- 1 pkg Crispy & Crunchy Coating Mix, or 1/2 cup breadcrumbs
- 2 tbsp Marinara Sauce Mix or Pizza Seasoning
- 1 lb (450 g) lean ground beef, chicken or turkey
- Bett Thank Bacon Topper, to taste
Preparation
- Cut lettuce lengthwise into small wedges. Be sure to leave core intact so the wedges stay together.
- Arrange wedges on a platter. Top with warm Classic Meatballs.
- Drizzle with a few spoonfuls of Caesar Dressing then generously shake Better Than Bacon Topper overtop.
