Lemony Shrimp Skewers

Say hello to summer with these delicious skewers, bursting with fresh, citrus flavours! Shrimp are a low-calorie and low-fat protein, so they’re a great choice for weight management.

Ingredients

  • 2 bell peppers
  • 2 small zucchini
  • 1 small red onion
  • 1 bag (340 g/12 oz) frozen, peeled, raw jumbo shrimp, thawed
  • 12 pkg Lemon Garlic Chicken Seasoning
  • 2 tbsp olive oil
  • Toppings (optional): chopped cilantro, squeeze of lemon juice

Preparation

  • Preheat grill to medium high heat. Lightly brush with oil.
  • Chop peppers, zucchini, and onion into 1–2" pieces and place in a large bowl. Add shrimp, seasoning, and oil; toss to coat. Thread veggies and shrimp onto Grill Boss Skewers.
  • Grill skewers 2–3 min per side, or until shrimp are bright pink and veggies are tender. Serve with toppings, if desired.
