Lemony Blackberry Yogurt Pops

These pops are so chill—no need to sweat it out in the kitchen for these no-bake treats. Tastes like a creamy, lemon cheesecake but made protein-packed Greek yogurt. If only summer could last forever!

Ingredients

  • 3 eggs
  • 1 pkg Luscious Lemon Curd Mix
  • 12 cup water
  • 1 cup  plain 11% Greek yogurt
  • 1 cup fresh or frozen blackberries

Preparation

  • In a microwave safe bowl, whisk eggs until foamy. Add mix and water; whisk until well combined.
  • Microwave uncovered on high for 2 min, until thickened, whisking halfway through and at the end. If curd has not thickened after 2 min, cook for additional 30 sec intervals, whisking after each, until desired thickness is achieved.
  • Cool lemon curd in the freezer for 10 min, whisking every 2–3 min.
  • Fold yogurt and berries into lemon curd. Divide between twelve 2-oz silicone popsicle molds. Place popsicle sticks into molds and freeze for at least 2 hr or overnight.
