Jamaican Jerk Chicken

Ingredients

  • 6 boneless, skinless chicken breasts
  • 2 tbsp Jamaican Jerk seasoning
  • 1 tbsp dark rum, optional
  • 1 lime, juiced
  • 1 tbsp vegetable oil

Preparation

  • Rub chicken breasts with Jamaican Jerk seasoning, dark rum, lime juice and vegetable oil. Marinate in refrigerator for up to 4 hours.
  • Preheat oven to 400° F (205° C).
  • Lightly spray a frying pan with vegetable oil.
  • Quickly sear rubbed chicken breasts over medium-high heat. When both sides are browned, place pan in oven for approximately 15–20 minutes.
