Irish Lamb Stew

This deliciously cozy recipe features tender chunks of lamb, potatoes, and carrots in a rich red wine infused broth. It’s sure to impress at less than $2 a serving!

Ingredients

  • 1 12 lbs diced lamb
  • Sea Salt, to taste
  • Black Pepper, to taste
  • 2 tbsp vegetable oil
  • 1 large onion, diced
  • 2 tbsp Rosemary Garlic Seasoning
  • 2 tsp Minced Garlic
  • 12 cup red wine
  • 6 cups Vegetable Broth
  • 1 12 tsp Vegetable Broth Mix
  • 1 cup boiling water
  • 2 large carrots, cut into large chunks
  • 4 medium potatoes, cut into large chunks

Preparation

  • Season lamb with Salt and Pepper. Preheat frying pan to high, add 1 1⁄2 tbsp vegetable oil and brown lamb on all sides.
  • Heat Multipurpose Pot to medium. Add remaining vegetable oil and sauté onions for about 5 minutes, being careful not to brown. Stir in lamb seasoning and Minced Garlic.
  • Pour red wine into pot, stir vigorously and reduce by half. Add Vegetable Bouillon and browned lamb and heat until simmering.
  • Add carrots and potatoes, cover and gently simmer until vegetables are tender, about 45 minutes. Season to taste and serve.
