It’s summer so you know what that means—the glorious season of juicy, sun-kissed tomatoes is upon us! From deep reds to sunny yellows, heirloom tomatoes are like a rainbow on your plate. Now let’s talk burrata. Each ball is a pouch of fresh mozzarella filled with a creamy, velvety centre. Find it in the good cheese section at the grocery store.

Ingredients

  • 4 heirloom tomatoes, about 1 kg (2.2 lbs/35 oz)
  • 1 tbsp Marinara Sauce Mix
  • 1 tbsp olive oil
  • 1 ball (9 oz/250 g) burrata cheese
  • 14 cup prepared Pesto Sauce
  • 2 tbsp Pesto Sauce Mix
  • 2 tbsp water
  • 2 tbsp pine nuts or pistachio nuts, optional
  • 1 tbsp grated Parmesan cheese
  • 14 cup olive oil

Preparation

  • Chop tomatoes into 1" pieces, reserving the juices.
  • In a large bowl, add tomatoes (including the juices), sauce mix, and olive oil; gently toss to combine.
  • Place burrata ball in the centre of a serving platter. Arrange salad around it. Drizzle with pesto.
