Ingredients

  • 2 boneless, skinless chicken breasts, sliced in half lengthwise to create 4 thin cutlets
  • 2 - 3 tbsp Honey Mustard or Sweet & Spicy Mustard or Dijon-style mustard
  • 4 slices Swiss cheese
  • 14 cup BBQ Sauce
  • pickled red onions, prepared, to taste
  • 4 hamburger buns

Preparation

  • Coat chicken breast halves with mustard on both sides and set aside.
  • Preheat grill to medium and cook chicken with lid closed for approximately 4–6 min per side or until cooked through and chicken has reached a Food Safe internal temperature of 165° F. Top each with a cheese slice during the last two minutes of cooking.
  • Spread one half of the buns with barbecue sauce, top with chicken breasts.
  • Top chicken breast with pineapple, onions, your favorite toppings, close buns and serve.
