Grilled Summer Vegetable Naan Pizza

Order to go, right off the grill!

Ingredients

  • 2 large whole-wheat naan
  • 2 - 3 tbsp Greek Dressing
  • 2 tbsp Greek Dressing Mix
  • 34 cup olive oil
  • 14 cup red wine vinegar
  • 12 recipe prepared Grilled Summer Vegetables
  • 2 bell peppers, cut into thick strips
  • 2 medium zucchinis, sliced 1/4” thick
  • 1 medium onion, sliced 1/4” thick
  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 - 2 tbsp Better Than Bacon Topper
  • Sea Salt, to taste
  • Black Pepper, to taste
  • 14 cup crumbled low-fat goat cheese

Preparation

  • Preheat grill to medium heat.
  • Using a basting brush, brush Greek Dressing on naan. Top with Grilled Summer Vegetables and cheese.
  • Heat on grill for 3–4 minutes until naan becomes golden and slightly crisp. Cut each naan in two and serve.
