Grilled Chicken Curry Caesar Salad

Finally, a low-calorie, protein-packed Caesar salad that’s delicious and filling!

Ingredients

  • 1 tbsp Caesar Dressing Mix
  • 1 tbsp low-fat plain yogurt
  • 14 tsp Minced Garlic
  • 1 12 tsp lemon juice
  • 2 tbsp extra-virgin olive oil
  • 2 tbsp low-fat milk
  • 2 tbsp grated Parmesan cheese
  • Black Pepper, to taste
  • 1 tbsp vegetable oil
  • 4 cooked chicken breasts, or equivalent tofu, cubed
  • 1 tbsp Mango Curry Dip Mix, or curry seasoning
  • 6 cups chopped Romaine lettuce
  • 12 cup whole-grain croutons

Preparation

  • Whisk together dressing ingredients and set aside.
  • Heat oil in frying pan over medium heat. Add chicken and curry. Cook thoroughly and set aside.
  • In a large mixing bowl, toss lettuce with dressing. Mix in croutons and top with chicken. Serve immediately.
