Gingered Carrot Soup

When the cooler weather hits, warm up from the inside out with some soup, the ultimate comfort food. Ginger is like a winter superhero for your taste buds and your immune system. Its zesty warmth adds a delightful kick to any dish, while its natural anti-inflammatory properties help keep those winter sniffles at bay.

Ingredients

  • 1 large onion, coarsely chopped
  • 1 tbsp olive oil
  • 1 lb (450 g) carrots, peeled and cut in chunks
  • 2 cups Vegetable Broth or Nourish Broth
  • 1 12 tsp Vegetable Broth Mix
  • 1 cup boiling water
  • 1 12 tsp Nourish Broth Mix
  • 1 cup boiling water
  • 2 tbsp crystallized ginger
  • 1 tsp Apple Pie Spice
  • 1 12 cups orange juice
  • 12 cup half-and-half cream
  • Sea Salt, to taste
  • Black Pepper, to taste
  • 1 tsp chives

Preparation

  • In a Multipurpose Pot, cook onions in oil until soft.
  • Add carrots, broth, crystallized ginger, and spice.
  • Simmer for 25—30 minutes, or until carrots are tender. Blend until smooth in blender or food processor.
  • Return mixture to saucepan. Add juice and cream and heat to steaming. Season to taste with Salt and Pepper.
  • Serve immediately. Garnish each serving with chives.
