Gingerbread "Crackle" Cookies

Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking soda
  • 2 tsp Gingerbread Spices
  • 12 tsp Sea Salt
  • 34 cup butter
  • 12 cup firmly packed brown sugar
  • 34 cup white sugar, divided
  • 1 egg
  • 3 tbsp molasses
  • 2 tsp vanilla extract

Preparation

  • Preheat oven to 350° F.
  • Whisk flour, baking soda, spices and salt in a mixing bowl and set aside.
  • In a second bowl, cream butter with brown sugar and 1⁄2 cup white sugar.
  • Stir in egg, molasses and vanilla extract.
  • Gradually add dry ingredients, beating well after each addition.
  • Place remaining white sugar in a shallow bowl. Form cookies by rolling into 1” balls; roll in sugar and place 2” apart on Sheet Pan lined with Sheet Pan Liner.
  • Bake for 10 min, or until cookies ‘crackle’ on top. Cool before storing.
