El Dorado Speedy Tortilla Soup

Ingredients

  • 1 tbsp Poco Picante Salsa Mix
  • 4 cups Vegetable Broth
  • 1 12 tsp Vegetable Broth Mix
  • 1 cup boiling water
  • 1 can (28 oz/796 ml) low-sodium diced tomatoes
  • 1 can (19 oz /540 ml) black beans, drained and rinsed
  • 1 cup frozen corn
  • Sea Salt, to taste
  • Black Pepper, to taste
  • 1 recipe prepared El Dorado Sauce
  • 12 cup tortilla chips, crumbled

Preparation

  • In a Multipurpose Pot, combine first 5 ingredients and simmer for 10 minutes. Season with Salt and Pepper.
  • Top each bowl with a dollop of El Dorado Sauce and tortilla chips.
