Ingredients

  • 1 egg or 2 egg whites
  • 1 whole wheat English muffin
  • 1 12 tsp prepared Lemon Dilly, 3 Onion, or CCB Dip
  • 3 tbsp Lemon Dilly Dip Mix
  • 1 cup light sour cream
  • 1 cup light mayonnaise
  • 3 tbsp 3 Onion Dip Mix
  • 1 cup sour cream or plain yogurt
  • 1 cup mayonnaise
  • 3 tbsp CCB Dip Mix
  • 1 cup sour cream, or yogurt
  • 1 cup light mayonnaise
  • 1 slice low-fat cheese
  • 1 slice tomato
  • 14 cup baby spinach
  • Sea Salt, to taste
  • Black Pepper, to taste

Preparation

  • Fry egg in a fry pan over medium heat.
  • Meanwhile, toast English muffin. Spread one half of toasted English muffin with dip. Top with cheese, tomato, and spinach.
  • Season egg to taste with salt and pepper; place on top of spinach. Sandwich with muffin top.
