Detox Soup
The healthiest ingredients possible with lots of veggies and soothing tea, all in one pot.
Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 4 large carrots, peeled and chopped
- 4 celery stalks, chopped
- 2 cups sliced mushrooms
- 1 1⁄2 cups cauliflower or broccoli florets
- 1 - 2 tsp Fajita or Asian Stir-Fry Seasoning
- 4 cups Vegetable Broth, or broth of your choice, prepared
- 1 1⁄2 tsp Vegetable Broth Mix
- 1 cup boiling water
- 4 cups Sencha & Jasmine Green Tea Blend, brewed
- 1 cup mixed greens
- Sea Salt, optional
- Black Pepper, optional
Preparation
- In a Multipurpose Pot or wok, heat olive oil over medium heat. Add the onion and cook for about 2–3 min, until soft.
- Add veggies and seasoning. Stir to combine and cook for 3–4 min more.
- Add broth and tea. Bring mixture to a boil, reduce the heat to medium low, and simmer 15 min until the vegetables are tender.
- Just before serving, add the mixed greens and season to taste.
