The healthiest ingredients possible with lots of veggies and soothing tea, all in one pot.

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 4 large carrots, peeled and chopped
  • 4 celery stalks, chopped
  • 2 cups sliced mushrooms
  • 1 12 cups cauliflower or broccoli florets
  • 1 - 2 tsp Fajita or Asian Stir-Fry Seasoning
  • 4 cups Vegetable Broth, or broth of your choice, prepared
  • 1 12 tsp Vegetable Broth Mix
  • 1 cup boiling water
  • 4 cups Sencha & Jasmine Green Tea Blend, brewed
  • 1 cup mixed greens
  • Sea Salt, optional
  • Black Pepper, optional

Preparation

  • In a Multipurpose Pot or wok, heat olive oil over medium heat. Add the onion and cook for about 2–3 min, until soft.
  • Add veggies and seasoning. Stir to combine and cook for 3–4 min more.
  • Add broth and tea. Bring mixture to a boil, reduce the heat to medium low, and simmer 15 min until the vegetables are tender.
  • Just before serving, add the mixed greens and season to taste.
