Curried Tuna Salads for Verrines

‘Verrine’ comes from verre, the French word for glass. A Verrine is an impressive appetizer or dazzling dessert elegantly presented in a small glass.

Ingredients

  • 3 tbsp light mayonnaise
  • 1 tbsp Mango Curry Dip Mix
  • 1 can (4 oz/120 g) tuna
  • 3 tbsp Granny Smith apple, unpeeled, finely diced
  • 13 cup thinly sliced lettuce
  • 1 tsp red bell pepper flakes
  • 12 very thin slices of Granny Smith apple

Preparation

  • Whisk together mayonnaise and Mango Curry Dip Mix. Stir in tuna and diced apple.
  • Divide lettuce between 6 verrines.
  • Using a fork, gently pile tuna mixture over lettuce. Sprinkle with red bell pepper and garnish with apple slices.
