Ingredients

  • 1 tbsp unsalted butter or oil
  • 1 lb (450 g) boneless, skinless chicken thighs
  • 1 medium carrot
  • 2 12 cups sliced mushrooms
  • 1 pkg Coq au Vin Seasoning
  • 1 cup dry red wine

Preparation

  • Heat butter or oil in Sauté Pan. Slice chicken thighs in half, add to pan, and brown.
  • Meanwhile, thinly slice carrot.
  • Add carrot and mushrooms to pan. Stir-fry 3 min, or until mushrooms start to soften.
  • Stir in seasoning and wine; bring to a boil. Cover and reduce heat to medium-low. Simmer 10 min. Uncover and simmer for 3–5 min, or until sauce thickens.
