Cool as a Cucumber Wine Spritzer

Give that blender a whirl—it’s your tool to make chic, summer bevvies. Stay cool with subtle floral flavours and refreshing cucumber sweetness. Make it a mocktail by swapping dry, green grape juice for white wine.

Ingredients

  • 1 English cucumber, divided
  • 2 cups prepared Elderflower Cordial Tea or Pink Lemonade Herbal Tea, chilled
  • 1 cup boiling or cold water
  • 1–2 bags Elderflower Cordial Herbal Tea Blend
  • Ice cubes, optional
  • 14 cup club soda, optional
  • 1 cup boiling water
  • 1 bag Pink Lemonade Herbal Tea Blend
  • 2 cups white wine, your choice
  • 1 lime
  • 1 cup soda water

Preparation

  • Roughly chop half the cucumber and place in blender with tea and wine. Blend on high 1 min.
  • Meanwhile, dice remaining cucumber and slice lime into wedges. Set aside.
  • Slowly pour wine mixture through a sieve into a large pitcher. Use the back of a spoon to press down pulp to get as much liquid through the sieve as possible. Discard pulp.
  • Stir in soda water, cucumber, and lime. Pour over ice into four glasses.
