Kid’s birthday party coming up? Look no further than the ultimate intersection where sweet treats meet a party hat. These cookies are practically screaming to join in on the celebrations. And, they’re allergen friendly—no gluten or nuts, and you can use vegan butter for a dairy-free version. Make sure you use the long-rod sprinkles called “jim bits” so the colours don’t bleed into the cookies.

Ingredients

  • 1 pkg Smart Cookie Mix
  • 14 cup unsalted butter, softened
  • 1 egg
  • 12 tbsp vanilla extract
  • 12 cup rainbow jim bits sprinkles, divided (See Tip)

Preparation

  • Preheat oven to 350° F. Line Sheet Pan with Sheet Pan Liner.
  • Using a stand mixer (with paddle attachment) or hand mixer, beat mix with butter, egg, and vanilla extract on low speed until well combined. Fold in 1⁄4 cup sprinkles.
  • Scoop dough into 12 balls, about 2 tbsp each.
  • Pour remaining 1⁄4 cup sprinkles in a bowl or on a plate. Gently roll or dip the tops and sides of the cookies in the sprinkles. Arrange on pan, spacing 1" apart.
  • Bake 12–15 min, or until lightly golden on the edges and set in the middle. Let cool on pan for 5 min. Place cookies on Cooling Racks and cool completely.

Tips

It’s important to use long, rod-shaped rainbow sprinkles, aka “jimmies” or “jim bits,” for this recipe—they hold up during baking and their colours don't bleed into the cookie dough.
