Classic Greek Salad

Ingredients
- 2 English cucumbers
- 2 bell peppers
- 1⁄2 small red onion
- 1 pint cherry tomatoes
- 1⁄2 cup pitted Kalamata olives
- 1⁄2 cup crumbled low-fat feta cheese
- 1⁄4 cup Greek Dressing or Balsamic Vinaigrette, prepared
- 2 tbsp Greek Dressing Mix
- 3⁄4 cup olive oil
- 1⁄4 cup red wine vinegar
- 2 tbsp Balsamic Vinaigrette Dressing Mix
- 3⁄4 cup olive oil
- 1⁄4 cup balsamic vinegar
- Sea Salt, to taste
- Black Pepper, to taste
- 3 tbsp olive oil
- 1 tbsp red wine vinegar
Preparation
- Coarsely chop cucumbers, peppers, and onion. Cut tomatoes in half. Place in a large bowl; add olives and cheese.
- In a Cruet, combine dressing mix with oil and red wine vinegar. Shake to mix.
- Pour dressing over veggies; gently stir to mix. Serve immediately.
